JaxyCatDoes anyone happen to know of any cat rescues in the Jacksonville Florida area? We have an URGENT Need for a home for an extremely loveable cat we have named JAXY. She appears to have been dumped by someone because she is pregnant.
She looks like a tuxedo cat, black and white however, she has no tail. Not sure what happened there! Coulda been born that way. No apparent injury. She is very clean, very friendly, no fleas, and extremely loveable. From day one we have been able to pick her up and she purrs and rubs on you.

We cannot keep her but because of her condition, we let her in to feed her and allow her respite from the heat and a few hours of safe sleep. But, no pets allowed where we live. We have gone on line and she has made her photo debut on Facebook. No one has responded. I have no pics. I doesn’t let me put into media library. All the supposed no-kill shelters in Jacksonville either say they can’t take any or that they now euthanize. Any vets out there that can help? Please email me at email on my ABOUT JEANETTE page. It’s only gonna be a few weeks till she delivers. Don’t want the babies to be born outside but unfortunately we cannot keep her inside. Thanks so much.


This is a recipe she’s had for years and modified to add two  or three Jalapeno peppers. It is unfortunate that she does not know, nor do I, who to give credit to for this amazing recipe. Makes about 80 puffs.


10 ounces cheddar cheese

2 cups water

2 cups of flour

8 ounces unsalted butter

2 tsp sugar

2 tsp salt

1/8 tsp cayenne

6 eggs

2-3 Jalepeno peppers seeded and ribs removed, diced very small


Preheat oven to 400 degrees Fahrenheit.

2. Grate cheese and set aside.

3. Melt butter with water, sugar, salt, and cayenne.

4. Once butter is completely melted with the water  add the flour all at once.

5. Reduce heat and stir with a wooden spoon constantly for 1 minute.

6. Pour into mixing bowl and mix with paddle attachment for 1 minute   on medium low to cool the mixture.

7. Increase speed to medium and add eggs one at a time , making sure each one is incorporated before adding the next.

8. Fold in grated cheese and Jalapeños.

9. Drop with a small ice cream scoop (or you can use two spoons) onto sheet pan lined with parchment paper or a silicone liner.

10. Sprinkle with paprika.

11. Bake for 11 minutes.

12.  Turn the pan and bake for 11 more minutes.

NOTE : Serve warm. This recipe is easily halved and once cooled, leftover puffs can be frozen.

While in someone’s office , something on their desk caught my eye. Something unusual and functional.  The tag hanging  off it read,      ” Message  on a bottle”. Of course, me being me, I had to say, ”  May I see that?” and my brain said, ”  I can make that! ” and I did.


A lot of wine corks ( my friend saved me hers for weeks)

Sharp knife or other cutting tool

A bottle



Smaller type seashells

Hot glue gun

Pretty cording

Tag you make on computer or card stock and laminate

Hot glue gun and glue sticks


1. Clean a wine bottle or other bottle out and dry.

2. Cut all your corks in half.

3. Glue corks around entire bottle very carefully so as not to leave any gaps.

4. When reaching the top you may have to cut the cork to be level with the bottle.

5. Place netting around entire bottle. Hot glue to bottom of bottle if needed.

6. On top of bottle glue an appropriate sized seashell.

7. Make a tag on the computer with borders or whatever you like with text that says, ” Message on a bottle.” or you can print on card stock if you wish.

8 . If you want to you may laminate and when done, punch a hole in the top center or corner of the tag.

9. Tie decorative thin cording around bottle top after placing through your tag.

10. Take small seashells that opening to seashell can cover top of pushpin and glue in place? Use a decent amount of glue so that at least 1/4 of the head of pushpin is submerged in hot glue to avoid the seashell from falling off. Set aside till glue is dry.

11. Stick pushpins into cork at random places around bottle.

12.  Attach your message, to/ from with a seashell pushpin . What a creative way to rid your desk of all those little post-it notes. 🙂

The creation is your own: can put linen napkins, salt n pepper shaker, mortar and pestle, wire whisks, decorative dish scrubbers, hand moisturizer, whatever you can think of that’s used in the kitchen.


Having a barbecue and need a colorful way to serve your fruit? Need to keep the children busy so you can get your cooking done? This is a perfect solution for both of those things. Just assemble one the way you want it and ask the children to copy what you have done. Have the children wash their hands. Set them at a table and  they’ll stay busy for a while and be proud of what they’ve done. My granddaughter Mariah loved making these. And they are the perfect size, so that you aren’t throwing away a lot of plates with uneaten fruit at the end of the barbecue.


Green seedless grapes or red grapes or both if you choose

jar of maraschino cherries halved

Cantaloupe cubed into pieces the size of your grapes

A can of Dole pineapple chunks

Honeydew melon cut into cubes

Strawberries cut in half

Bamboo or other type wooden skewers


After an adult cuts and washes all items, place each fruit in a separate bowl. Pick a pattern of colors that you like and have children place in the same order on bamboo skewers. Place all on a serving platter . Cover and place in refrigerator to chill.

VARIATIONS: You can use kiwi , star fruit, blueberries, raspberries too if you wish. I found personally, watermelon often falls off the skewer easily. Bananas I do not use because many children are allergic to them and they do turn brown, ruining the beauty of the entire skewer. I have used raspberries blueberries and mini marshmallows for a fourth of July barbecue. These skewers are always a big hit at any  party I’ve brought them to and so easy,  a child can do it.



1 lb. boneless Boneless chicken ( cut into bite-sized pieces)

1 medium onion diced

1 can Goya pigeon peas (rinsed with water)

I tablespoon of minced garlic

Large pinch of saffron

Few pinches of Salt to taste

I small green, red and yellow sweet peppers diced . ( you can halve medium sized ones)

1 cup of white long grain rice rinsed with cold water and drain

2 cups of chicken broth ( can use from can but not low sodium one)

Olive oil Heavy bottomed pan  with lid


1.Place olive oil enough to cover bottom of  pan. Heat on high for a minute while rinsing rice and pigeon peas. Also called gandules.

2.  Add saffron, few pinches of salt, onions and peppers and lower heat to medium.( Number six on electric stove)

3. Sauté onions and peppers for three minutes and stir frequently till onions start to look translucent

4. Add chicken and garlic and continue to stir every few seconds to cook outside of chicken.

5. Add your rinsed and drained Goya pigeon peas and rice and stir

6. When rice is well coated and yellow color, add two cups of College Inn chicken broth and turn heat to high. Then stir once after turning heat to high

7.When broth begins to boil, stir a few times so nothing is stuck to pan, COVER at once and turn heat to low. (number 3 on electric stove)

8.  Set timer for twenty minutes. DO NOT REMOVE POT LID until after timer goes off.

9.Remove pan from heat and set aside.

10. Serve

VARIATIONS: You  don’t need all three colored peppers. I just do that because it looks nice with different colors. You don’t have to use peppers if you don’t like peppers. It will still taste great. You do not have to vary water if omitting anything.

Very simple but elegant dessert. Your friends will think it took hours to make. YOU WILL NEED:

1.    Pre-made , store bought poundcake that is moist.

2. Home made whipped cream ( see my recipe) you can use store bought but it doesn’t hold up as well in the refrigerator.

3.  Ripe strawberries or frozen in syrup.

4. Waxed paper or parchment paper

INSTRUCTIONS: 1. Prepare homemade whipped cream and place covered into refrigerator.

2.Take poundcake and cut in half lengthwise and set top half aside.

3.Put bottom half on top of serving platter.

4. Cut small pieces of parchment or waxed paper and place under all sides of pound cake bottom so that the paper hangs over the sides of platter. ( this helps you have a very clean platter as you will  remove it carefully after frosting entire cake)

5.Cut strawberries thinly lengthwise across entire pound cake . Spread whipped cream on top of strawberries.

6. Carefully taking top half of pound cake and now place on top of bottom half. If it seems like its going to break, lift with spatula.

7. Coat top layer and all sides with remaining whipped cream. Add sliced strawberries across top of cake in whatever design you choose. Can be three or four evenly spaced or make a line down the center of cake of sliced strawberries , partially overlapping each other, across the entire cake. The look is whatever you want it to be.

8. Remove paper and refrigerate  till serving. Yummy! Enjoy!

NOTE:You can place sliced strawberries in bowl and sprinkle with sugar for added sweetness. Let sit fifteen minutes before placing on cake. Have a blessed day!

Home made or a jarred sauce of your choosing
French, Italian or Puerto Rican Bread loaf
Mozzarella cheese shredded
Ricotta cheese (optional)
Bacon, pepperoni slices, cooked chopped meat
Small diced onions, mushrooms, green peppers, or whatever you like on your pizza already cooked
package of English muffins
Olive oil


1. Saute your meat, bacon, onions , mushrooms in a pan with a tablespoon of olive oil till done.

2. Split English muffins in half and place on lightly oiled baking  sheet.

3. Place spoon full of sauce on tops of English muffins until coated.

4.  Add mozzarella cheese evenly on top of sauce. Add tiny bits of ricotta around the pizzas.

5. Add the remaining cooked  ingredients that you like on top of cheese.

Bake in oven that has been preheated to  325 degrees Fahrenheit for ten to fifteen minutes and enjoy.!

Glue to glue on eyes ( I use a dab of Dap Caulking )
Toothpicks ( to apply caulking or glue  onto rock where google eyes will be placed)
Glue gun n glue sticks if you plan on turning into magnets to use on refrigerator or school lockers or other metal surface.


1. Wash rocks and allow to dry.

2. Paint rocks color of your choice allowing first side to dry then flipping rocks over, paint the other side.

3. Once dry, with toothpick place dab of glue or caulking onto rock where you will be placing eyes.

4. Place google eyes in place.

5. Using black paint, dip toothpick in place and draw mouth.

6. When mouth is dry, again using toothpick or small paint brush , draw teeth where you would like them.

NOTE: If you do not have google eyes you can dip handle of paintbrush into white paint and dot where you want happy monsters eyes to be.once dry, dip toothpick or smaller brush handle into black paint and make pupils for eyes. If you want to make eyes appear as if they are shining, once black dries, take toothpick and draw an apostrophe to the right of the pupil.

May use as desk ornament or add magnet . Very cute when given as set of three or more different colors and expressions. Inexpensive gift for family members or co-workers.
